I have seen the Birthday pancakes all over Pinterest. But when I looked at the recipes they were all make with white cake mix, frosting and lots of sugar. I’m sure they are super delicious, and Jack would loved them. But I have a kid who eats nothing. I mean nothing. His diet consists of bread and crackers. So I take every opportunity I can to sneak in some fruits or vegetables when I can.
I had very little time this morning to make breakfast before school started so I used pancake mix and added some healthy stuff. Wasn’t sure if they would work but they were great. The kids and the adults gobbled them up. And no one knew they had applesauce in them. Whew.
Healthier Breakfast Pancakes
2 cups dry pancake mix
1.5 tsp cinnamon
1 cup applesauce
1/2 cup milk
1. In a large bowl, stir together pancake mix and cinnamon. Make a well in the center of the pancake mix. Add the eggs, applesauce, and milk; stir until smooth
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Drop a handful of sprinkles on the top of each pancake. Brown on both sides and serve hot.
